recipe for fluffy, soft bread!

i have used this recipe a couple times already, its a slightly modified version of this recipe.

ingredients

this recipe is pretty forgiving, you can vary the amounts of ingredients quite a bit and it'll still probably turn out fine. also!! this is a kinda bland bread, you can add more salt/sweetener, or any other seasonings.


mix the fresh yeast with the sugar, until its liquid. (if you're using dry yeast you should probably mix it into the milk i think)
add the milk and melted butter, it should probably be a bit cooled down, so you wont kill the yeast, i usually melt the butter by mixing it into hot milk, which results in a mixture of adequate temp, you can also mix cold milk into melted butter for the same effect.
add some of the flour, add the honey and salt (and other seasoning if you'd wish)
add the rest of the flour
knead the dough a bit
cover the dough with a towel and let it rise a bit, (you can also do this in the fridge overnight, in which case you should let it rise at room temp for 30 minutes before putting in the fridge)
once its risen, you can shape it. there are a couple options,
you can make braids, twists, loaves, or a loaf but in a bread pan or whatever. you should probably divide the dough into 2 or 3 portions before making any of the afformentioned shapes. or don't. but if you dont youll probably need to bake a bit longer. my favourite form, however, is making little buns.

brush with egg or milk, optionally you can sprinkle some sesame seeds on top. bake for 15-20 minutes at 180-200° for buns, 23-30 minutes for other shapes. i usually turn the temperature up quite high at the end of the baking, just to quickly brown them if they havent already.
brush with water right after taking it out of the oven for a softer crust.
